I would like to see options like: "download all new movies" or "download movies with no info" or "download movies with no covers" or something like "update movie info".
Would something like that be possible?

ok so I worked out that I can put _1 _2 etc after the cover name, but is there not a way to do this from the GUI?

Yes, of course!

Just select a movie and open the EDIT window (press the button at top or double click on the movie).

Now, in this EDIT window, press the COVER button, select all images you want and press TAKE button : XMM will import images automatically!
