How do you add a tv show to your box set and how do you add a box set that has multiple tv shows and different seasons and episodes on the same disc. example: "Ultimate TV Westerns"

You have multiple questions here so I'll answer them one at a time.

ADD TV SHOW TO BOXSET...
You can't add an individual TV Show or Season to a BoxSet. You can only add a Series. To create a BoxSet, go to the Add Movies command at the top and select the "Add BoxSets" from the drop-down list. It doesn't matter is the BoxSet is for Movies, TV Shows or a Combination of Movies and TV Shows. To add a Series to a BoxSet, go to the "TV Show Database" and select/expand the list. In the Grid View, Right-Click the Series and from the list of commands, select the "Assign to a BoxSet" (When you highlight the Assign... command, a list of available BoxSets is shown, which you can select the desired BoxSet).

The second part of your question is a organizational issue for which the answer depends on how much work you want to do. Since the long answer would take me a long time to write and even longer for you to do, and ultimately not give you exactly what you would ideally want. So I'll stick with the simplest solution. Treat the disc as a Series and the individual shows on it as individual episodes within that Series. You could also add each show on the disc as its own Movie and use the BoxSet function to tie them together (not what I would do).

That's about it. Sorry I couldn't give you what you'd ideally like to have.
